| Foodadditivesarechemicalsubstancesaddedintentionallytofoodstuffstopreserve, color,sweetenandflavorfood.Monosodiumglutamate(MSG)isusedasaflavorenhancerand foundinmostsoups,saladdressingandprocessedmeat.TheuseofMSGinfoodisgrowing. Irrationalfearhadincreasedinthelastfewyearsduetotheadversereactionsandtoxicityof MSG. ThepresentstudywasdesignedtoinvestigatetheeffectofMSGontheratliverandthe amelioratingeffectoftaurineanalog“Guanidinoethanesulfonicacid(GES)”.Sixtyalbinorats (2-3monthsold)wereusedinthepresentstudy.MSGwasgivenorallyatadailydoseof60 mg/1000gforonemonth,twomonthsandwasgivenatadailydoseof100mg/1000gmforone month.TheresultsrevealedthatthedeleteriouseffectsofMSGweredoserelatedand cumulative.InMSGtreatedrats,theexaminedsectionsshowedremarkablealterationsvaried considerablyfrommoderatestructuralchangestocytoplasmiclysisandsignsofdegenerationof cellularorganelles.Thehistologicalchangesshoweddisturbedliverarchitecture,hemorrhagein thecentralveins,areasofnecrosis,vacuolationandincreasedinflammatorycellsinfiltration. Theglycogengranulesincreasedaswellasthecollagenfibersinthelivercells.Ultrastructural changesshowedlossofcytoplasmicdifferentiation,vacuolation,pyknoticnucleiwithirregular nuclearmembranesandelongatedelectrondensemitochondria.Conversely,treatmentofrats withtaurineanalog(GES)significantlyattenuatedthecellulartoxicityofMSG. | ||
