Abstract | ||
The research has been performed to detect the incidence of foodborne pathogens from frozen beef meat by evaluating the total colony and coliform count, separation and recognition of E. coli, total psychotropic colony count, salmonella, and S. aureus. A total of one hundred random frozen meat specimens (each of 50 g in weight) from various supermarkets and butchers' shops from Menoufia governorate were examined. An average of the total colony count of frozen meat samples was log4.51±0.96. The total coliform count of examined frozen beef meat samples expressed as a log10was 3.11±0.95. The mean values of the total psychotropic colony count of studied frozen beef meat samples expressed as a log10cfu/g was4.27±0.75. Serotyping of E-coli species and incidence separated from the specimens of frozen meat studied was EHEC 25%, EPEC16.6%, ETEC 8.3%, EPEC 16.6%, EPEC 16.6%, EHEC 8.3%, EIEC8.3 % respectively. Frequency and serotyping of Salmonella separated from the investigated samples was, S. Typhyimurium 4% and S. Enteritidisin 6% for frozen meat. The S. aureus incidence in examined frozen beef meat from 21 samples was 42% S. aureus. | ||
