Abstract | ||||
Adsorption and desorption isotherms for two different varieties of peanuts, namely: Ismailia1 “Is1” and Giza5 “G5” were evaluated using the dynamic method of equilibrium moisture content “EMC”. Three different temperatures of the circulated air “T”: 30, 36 and 43 o C; four different levels of relative humidity “RH” namely: 2.5, 32, 46 and 87% were studied. Non-linear regression analysis was made for evaluating the compatibility of the experimental data to Henderson’s model. Multiple regression analysis was also used to sensitize a generalized model and for determining the effect of peanut variety, adjacent air temperature and relative humidity on the EMC of peanut for both adsorption and desorption tests for the previously defined range of both T and RH. The main objective of the present study is to evaluate the best fit model for the equilibrium moisture content to be available in analytical study for drying, storage and practical design of drying systems of peanut. | ||||
