أجریت هذه التجربه فى قسم الخضر وقسم علوم تکنولوجیا الأغذیه بکلیة الزراعه – جامعة أسیوط خلال فترتى التخزین 2013/2014 و 2014/2015 ، تم توفیر صنفین من الأصناف المحلیه من الثوم وهما صنفى أسیوط والمنیا و تم وضع معاملات التخزین فى تصمیم قطاعات کاملة العشوائیه (CRBD) مع أربع مکررات.

یهدف هذا البحث إلى دراسة تأثیر أسالیب التخزین (یشمل التخزین التعبئه والتغلیف فى ورق الجرائد وأکیاس البولى إیثلین، وازالة الساق القرصیه والمعامله الحراریه والتغطیه بمواد (أجار، جیلان، شیتوسان، أجار وشیتوسان ،أجار وجیلان) على بعض الخواص الفیزیائیه والکمیائیه.

أوضحت النتائج أن الخصائص الفیزیائیه والکمیائیه لنباتات الثوم المخزنه تأثرت بشکل کبیر بطرق التخزین المختلفه ، حیث أظهرت النتائج أن طریقة التخزین فى أکیاس البولى اثلین أعطت أعلى نسبة فقد فى الوزن ، بینما أعطت طریقة التخزین بلف نباتات الثوم بورق الجرائد أقل نسبة فقد فى الوزن.

أظهر التحلیل الکیمیائى أرتفاع نسبة البروتین ، الفلاوفونید بشکل ملحوظ فى حین أن الکربوهیدرات انخفضت بشکل کبیر مقارنه بالعینات الطازجه والکنترول وذلک نتیجة لمعاملات التخزین.
