Abstract | ||||
Date palm have excellent antioxidant activity due to containing high flavonoids and phenolic and has been cited for the treatment of liver problems. To inspect the hepatoprotective activity of burgers fortified and preserved using date in carbon tetrachloride (CCl4)-induced Hepatotoxicity in rats, thirty-six rats were divided into two groups, the first G (1) was negative control, rats of second group were injected by 0.5 ml/rat CCl4 in paraffin oil 50 % (3 ml/kg of body weight) twice a week for two weeks to induce hepatointoxication. Then, blood samples were collected to ensure occurrence of liver injury, after that were divided into 5 groups, G (2) Hepatointoxicated rats as a positive control and fed on basal diet only. G (3) Injected rats by CCl4 were fed on basal diet with burgers control, G (4, 5 and 6) Injected rats by CCl4 were fed on basal diet with preserved burgers using date seed (10, 20 and 30g /kg). Results demonstrated that burgers fortified and preserved using date seed revealed significant improvement in CCl4-induced indicators hemoglobin (HB) and packed cell volume (PCV), (AST, ALT and ALP) liver function parameters. Both serum creatinine and uric acid levels were significantly decreased and nitric oxide (NO). Also restored the antioxidant enzymes activities (glutathione S-transferase (GST), Catalase (CAT) and superoxide dismutase (SOD)) that were deficient after CCl4 induction. The Date Palm seeds might be a promising choice for hepatoprotective against CCl4-induced liver intoxication. It can be utilized as natural preservative additive in suggestive formulations as functional foods. | ||||
