| Abstract | ||||
| Background: Ice cream is one of the dairy products that people like most especially in hot seasons. Salmonella is one of the important agents in foodborne diseases. The present study investigated the prevalence of Salmonella serotypes and their antibiotic resistance in traditional and industrial ice creams in the city of Tehran. Methods: In total 140 ice cream samples (70 traditional and 70 industrial) were randomly collected from different areas of Tehran. Then, according to the national standard of Iran No 4413, microbial contamination caused by Salmonella and other Enterobacteriaceae family bacteria was investigated. The API-20E kit was used for the final confirmation of isolates. Serotyping of Salmonella isolates was performed using the slide agglutination method. Finally, the disc diffusion method was used for the antibiotic sensitivity test. Results: 81 samples (52.8%) were infected with at least one bacterium. 9 samples (6.4%) were contaminated with Salmonella and 57 samples (40.7%) were contaminated with other bacteria such as Escherichia coli (E. coli), Enterobacter, Klebsiella, and Citrobacter. 7 samples (5%) were infected with 2 bacteria. All samples of industrial ice cream were free of Salmonella and E. coli and these bacteria were only obtained from traditional ice cream samples. The serology test showed 9 isolated Salmonella belonged to Infantis, Gallinarum, Typhimurium, and Dublin serotypes. All Salmonella isolates were sensitive to cefotaxime, ceftazidime, and ciprofloxacin antibiotics. Conclusion: The results of this study showed the presence of different serotypes of Salmonella in traditional ice creams. | ||||
