Abstract | ||||
Meat products are important sources of good quality protein for human health. Meat products, Kofta, Oriental sausage, and Hawawshi, are popular, palatable, and desirable foods for Egyptian consumers because they are ready-to-eat products. Bacterial contamination of meat products is an issue that may arise from improper handling during transportation, processing, storage, and distribution or from the raw ingredients used in their manufacture. Therefore, this study investigates the hygienic status of Kofta, Oriental sausage, and Hawawshi samples using 3M petrifilm as a quick method for bacteriological evaluation. The mean values of total bacterial counts (cfu/g) in Kofta, Oriental Sausage, and Hawawshi samples were 4.1×105, 5.3×104, and 3.2×105, respectively. The number of accepted Kofta samples was 22 (73.3%) while 8 (26.7%) samples were found above the Egyptian Standard limits (105cfu/g). It can be inferred that several bacteria at varying degrees are present in some meat products sold in Damietta City’s markets. A high incidence of foodborne bacteria in the samples constitutes a public health hazard that indicates poor sanitation during production, and post-processing contamination. | ||||
